Part 1:Childhood Memories – do you have any?

The smell of freshly baked bread on a Saturday morning can be glorious don’t you think?
I’m not sure about you? For me, after a busy week, I tend to sleep in Saturday mornings.

As I was sleeping in, I discovered that our Nanny was busy making home made bread…how Wonderful, I thought… Thanks Luja for this one (I’ve trained you well). This took me back to childhood days when I used to wake up with the smell of baked bread or even breakfast cooking in the kitchen (my Mom doing Her thing/ working Her magic!). See a picture of my Mom when She was younger with my siblings – She looks nothing like me, don’t you think?

Back to Saturday morning…I had a ‘melt in the mouth’ good quality butter and a home made mixed fruit preserve on the warm bread it was OH SO HEAVENLY! With freshly brewed coffee off course 🙂

White bread loaf

800g flour, sifted
10g dried yeast
125ml brown sugar
A pinch of salt
400ml , warm water
10ml cooking oil
15ml butter, cut into blocks

Mix together the flour, yeast, sugar and salt, then make a well in the middle.
Add the warm water in the well and mix in.
Knead the dough on a lightly floured surface for 10 minutes until it is elastic.
Shape the dough into a ball and coat with the cooking oil.
Cover the dough and leave to rest in a warm place until double the size.
Uncover the dough and knead in the butter until mixed through.
Place the dough in a greased bread tin and proof until double the size.
Bake for 50-60 minutes at 180C until a skewer comes out clean.

Serve with a spread of butter and dried fruit preserve.

To make the dried fruit preserve:
200g, mixed dried fruits (raisins, sultanas, blueberries etc)
150ml, water
100g, brown sugar
5 ml ground cinnamon

Add all the ingredients in a sauce pan and simmer on medium heat while stirring for 10 to 15 minutes until the syrup is thick.
Fill in a prepared jar and store until needed.
