Part II: Childhood Memories

Pop it…Pop it BAbE!!!

…by the way, I mean popping corn not the question 🙂

Lets face it, its very rare these days where you would have families cuddled up the entire weekend doing what they love to do, especially if both Parents work. I don’t mean going to the ‘child friendly’ restaurants where Parents sit at the table and eat while the kids play at the play area.

Fellow reader, You ask yourself, when am I going to have time to do anything with the family. Sometimes a question does come to mind to have the entire family in a group of a social media network to catch up (thats if its not happening already) – hopefully not 🙂

We are all rushing, rushing to get somewhere – not entirely sure where to though. Sometimes its ok to just push the “pause” button in life.

So we’ve decided in our family to stop and BREATH!. Thats exactly what we did, we spent the weekend playing board games, watching comedies with the boys and if you were starting to think that we were a bunch of lazy beings at home…
…we also planted gooseberry and naartjie trees, lettuce and parsley in our garden.
its such a glorious feeling when these little plants grow.

Oh! you might be wondering my fellow reader, what all of this has to do with childhood memories part two, well We made popcorn and did some gardening as mentioned earlier off course which makes me miss both my folks. My Dads vegetable garden still lingers in my memory. His spinach and pomegranate tree are always the best. This all happening in the height of the Karoo in South Africa where there are extreme weather conditions and trying to grow anything can become a huge challenge.
Then on the other hand, my Mom’s sweet white snow sugar popcorn have been carried with me to my kids era. If you were my childhood friend then you will remember these clearly – they are moorish!

So Being the Foodie that I am, I then created more flavours. So I made red velvet pop corn and peanut butter popcorn. All three flavours went down a treat – FOR THE ENTIRE FAMILY.

Mom’s WHITE SNOW SUGAR POPCORN

60g popcorn, already popped
125ml (1/2 cup) sifted icing sugar

Method

Mix the icing sugar with the popcorn thoroughly and serve.

RED VELVET POPCORN

60g popcorn, already popped
125ml (1/2 cup) betroot juice
125ml caster sugar, sifted
30ml (1 tbsp), cream cheese
5ml (1tsp), cocoa powder

Method

Heat a saucepan on medium heat and add the juice and sugar. Cook for 10 minutes while stirring until a syrup consistency. Reduce the heat to low and whisk in the cream cheese. Once the cream cheese is mixed in and completely dissolved, stir in the cocoa powder and simmer for 5 minutes.

Remove from heat and set aside to cool completely. Drizzle over the popcorn and toss to coat the popcorn. Layer on a tray covered with baking paper for at least 20 minutes before serving.

By the way, both my kids loved these, you do not taste the beetroot at all, its just a natural color instead of using the artificial stuff.

PEANUT BUTTER POPCORN

60g popcorn, already popped
100g white chocolate
15-30ml (1-2 tbsp) smooth peanut butter

Method

Melt the white chocolate in a double boiler, when melted stir in the peanut butter until mixed through. Drizzle the mixture while still warm onto the popcorn and toss to coat. Layer on a tray covered with baking paper until the chocolate has set.

I got my husband hooked on these – if you can use home made peanut butter, otherwise shop bought is just as good.

These are so easy to make, so there is really no excuse not to make them 🙂
